Easy Tiramisu Cups | One Pot Chef



Easy Tiramisu Cups is a simplified version of the classic Italian dessert. Sponge finger biscuits are soaked in freshly brewed coffee and liqueur then layered into serving glasses with a rich, creamy marscapone mixture. Dusted with cocoa and chilled to perfection, this sweet treat is easy to make and guaranteed to turn heads  - give it a try today!

Ingredients:

1 Cup of Strong Freshly Brewed Coffee (250ml)
3/4 Cup of Icing Sugar
2 Tablespoons of Coffee Liqueur (I used Tia Maria, optional)
8 Italian Sponge Finger Biscuits (Savoiardi)
220g Marscapone Cream Cheese
1 Cup of Whipping Cream (beaten until thick)
Cocoa Powder (for dusting)

Preparation Time: About 20 minutes
Chilling Time: About 2 hours (minimum)

Creamy Red Lentil Curry (Vegan / Dairy Free / Gluten Free) | One Pot Chef



Creamy Red Lentil Curry is a Vegan friendly, Dairy Free and Gluten Free main dish, perfect for Meat Free Monday. Onion and garlic are combined with red lentils and a variety of spices along with tomato and coconut milk. Simmered gently, this creamy curry is great served over rice, with mixed vegetables or just by itself - Try it today :)

Ingredients:

1 Teaspoon of Vegetable Oil
1 Brown Onion (peeled and diced)
4 Cloves of Garlic (minced, about 4 teaspoons)
1 Teaspoon of Mild Mustard (I used Dijon)
1 Teaspoon of Turmeric
1/2 Teaspoon of Ground Coriander
1 Teaspoon of Cumin
1 Teaspoon of Mild Curry Powder
Salt
2/3 Cup of Tomato Paste
400ml Can of Coconut Cream
1 Cup of Dry Uncooked Lentils (rinsed)
3 Cups of Boiling Water
Mint (to garnish, optional)

NOTE: When cooking for people with Gluten Intolerance, ALWAYS check the packaging of ALL ingredients to confirm they are Gluten Free before you start cooking. 

Preparation Time: About 10 minutes 
Cooking Time: About 55 minutes

SERVES 4 to 6 (depending on serving size)

Classic Oat and Date Cookies | One Pot Chef



Oat and Date Cookies are a classic, old fashioned baked treat. Featuring juicy, sweet date pieces, rolled oats and a hint of cinnamon, these cookies are crunchy yet chewy, sweet yet spiced and guaranteed to be snapped up in minutes - give it a try today!

Ingredients:

3/4 Cup of Dried Pitted Dates (about 100g, chopped)
150g of Butter (I used unsalted)
1/2 Cup of White Sugar
1/2 Cup of Firmly Packed Brown Sugar
1 Teaspoon of Ground Cinnamon
1 Cup of Plain Flour
1/4 Teaspoon of Bicarbonate Soda (aka Baking Soda)
3 Tablespoons of Boiling Water
1 Egg
3 1/2 Cups of Rolled Oats

Preparation Time: About 10 minutes
Cooking Time: About 12 minutes per tray (bake one tray at a time)

MAKES APPROX. 30 to 40 COOKIES
